Ingredients


Somen noodles, 4 oz

Kimchi, chopped, 2 oz

Sugar (divided), 2 tbsp

Sesame oil, 1 tbsp

Cold noodle broth, 1 pack

Vinegar (divided), 2 tbsp

Egg, 1 pc

Cucumber, thinly sliced, 1 oz

Kimchi juice, 1 /2 cup

Preparation


Step 1

Slice cucumber thinly and cut kimchi into small bite-sized pieces.

Step 2

In a bowl, season the kimchi with 1 tbsp sugar and 1 tbsp vinegar.

Step 3

Cook somen noodles according to package instructions, then rinse in cold water. Boil the egg and peel.

Step 4

In a separate bowl, mix the broth with 1/2 cup kimchi juice, 1 tbsp sugar, and 1 tbsp vinegar.

Step 5

Place noodles in a bowl, top with seasoned kimchi, sliced cucumber, and egg. Pour over the cold broth and drizzle with sesame oil.

Step 6
